Here is a pic of where Abel and I went on our first hike of the season yesterday. He made it over a mile with not one complaint! Luckily, the trail was just that long. It was enough incentive for him to just get to the next red paint mark on the trees to keep on moving. I saw a fox and he saw some robins. We were satisfied.
And just like my spawn he asked what we had to eat just as we were wrapping up. I was glad I had the foresight to throw some unrelated edible things in a bowl prior to leaving the house. Abel was gracious enough to leave a pile for the wildlife under his log seat.
Ahhh, spring.

A friend asked for this recipe and since I was typing it out I thought I would share....

Green Chile Enchiladas

1 medium yellow onion
1.5 lb chicken breast or tenders
(you can add a little fajita type seasoning to chicken if you like)

1 can cream of chicken soup
1 can milk
1 pint (more or less) sour cream
1-2 small cans of green chiles with a little juice (to taste)
1 15 oz can green chiles with diced tomatoes

3 c. shredded extra sharp cheddar
8-10 large tortillas

salt and pepper

Saute onion and cook with chicken until chicken is just slightly pink.
Chop chicken.

Mix other ingredients into a sauce pan and adjust flavors as needed.
(Sometimes I use more chiles than others)

Spoon chicken and sauce with a little cheese to each tortilla and
wrap. Lay in pan and top with extra sauce and cheese. Bake at 350 until bubbly.
More things not to say to your probation officer:

"My lawyer told me that you are wrong."

"I brought some guys daughter to community service with me yesterday."

"I think I might have a warrant."

"Can you expunge the felony off my record so I can be a manager at work?"

"I don't have money for my fine." then.. "I used cocaine yesterday."
